A carcass chiller 100 comprising: an enclosure 112 for receiving a carcass 124a; an air inlet 130a and an air outlet 128a below, for introducing a jet of cooling air into the enclosure, the air being directed upwards towards the air inlet. The inlet and outlet may be on, or adjacent to, the ceiling 116 and floor 114, respectively. A duct 132 fluidically connects the air outlet and the air outlet. A cooling unit 136 and a fan is in the duct between the air inlet and the air outlet to cool and recirculate the air, to form the jet of cooling air from the air outlet. There is a method of cooling a carcass by placing the carcass within the jet of cooling air. The carcass may be suspended by a hook 126a on a rail 122a to convey the carcass.
