PROBLEM TO BE SOLVED: To provide a fat composition for butter cream capable of obtaining a butter cream containing less trans acid, less in collapse of a shape at high temperature or with the passage of time, excellent in shape retention, small in oozing out of a liquid oil, less in hardness change of a plastic fat, good in meltability in the mouth, and excellent in foamability, dispersibility, and liquid holding property when adding a liquid sugar and the like.SOLUTION: The fat composition for butter cream comprises: an ester-exchanged fat (A) obtained by ester-exchanging 5 mass% or more and 30 mass% or less of laurin-based fat (A1) with more than 70 mass% and 95 mass% or less of palm-based fat (A2); and a fat (B) having a triglyceride total amount of 1-25 mass%, where the total percentage of a 2 saturated and a 3 saturated triglyceride to a total fat amount is 30-65 mass%, the mass ratio of a symmetric type to an asymmetric type in the 2 saturated triglyceride is 0.25-1.2, the percentage of a triglyceride constituted by fatty acids having a carbon number of 40-48 is 5.0-30 mass% to a fat total amount, and the trans acid amount is 0.1-3 mass% to a fat total amount.SELECTED DRAWING: NoneCOPYRIGHT: (C)2020,JPO&INPIT【課題】高温や経時による形状の崩れが少なく保型性に優れ、液状油の染みだしが少なく、可塑性油脂の硬さ変化が少なく、かつ口溶けも良好で、そしてクリーミング時の起泡性と分散性、液糖などを添加したときの抱液性、トランス酸量が少ないバタークリームを得るバタークリーム用油脂組成物の提供。【解決手段】ラウリン系油脂(A1)5質量%以上30質量%未満と、パーム系油脂(A2)70質量%超95質量%以下とのエステル交換油脂(A)と、トリグリセリドの合計量1~25質量%の油脂(B)を含有し、2飽和及び3飽和トリグリセリドの合計割合が油脂全量に対して30~65質量%、2飽和トリグリセリドのうち対称型と非対称型との質量比が0.25~1.2、構成脂肪酸の総炭素数が40~48であるトリグリセリドの割合が油脂全量に対して5.0~30質量%、トランス酸量が油脂全量に対して0.1~3質量%であるバタークリーム用油脂組成物。【選択図】なし
