PROBLEM TO BE SOLVED: To provide an emulsifier for oil applied on a baked confectionery product with which an infiltration rate of the oil applied on the baked confectionery product is satisfactorily and stably enhanced.
SOLUTION: The emulsifier for coating oil applied on a baked confectionery product includes a polyglycerol fatty acid ester the constituent glycerin of which has an average polymerization degree of 3-15 and an HLB of 4 or more. Preferably, the constituent fatty acid is oleic acid or erucic acid.
