PURPOSE: A separation and refining method of ovotransferrin obtained from egg whites, and anti-cancer functional food using thereof are provided to adsorb Fe3+ ions with to the ovotransferrin for refining the ovotransferrin.CONSTITUTION: A separation and refining method of ovotransferrin obtained from egg whites comprises the following steps: separating egg yolks from the egg whites, and mixing the egg whites with distilled water mixing the egg white solution with 100ml of ovotransferrin solution and 3ml of FeCl3 6H2O, and adjusting the pH of the mixture into 7.0 centrifugal-separating the mixture after adding ethanol dissolving obtained residues in water, and adjusting the pH of the mixture into 4.5-6.5 and absorb-filtering iron using an AG1-X2 ion-exchange resin.COPYRIGHT KIPO 2013본 발명은 계란의 난백에 증류수를 가하여 희석한 후 pH를 조절하여 에탄올을 첨가한 후 원심분리하고 그 잔사에서 철분(Fe3+)을 제거하기 위해 AG1-X2이온교환수지를 이용하여 여과함을 특징으로 하는 철분이 제거된 것을 특징인 ovotransferrin의 신규한 제조방법과 상기 물질의 암 예방 및 치료용 천연 식품으로서의 신규 용도를 개시한다.
