PROBLEM TO BE SOLVED: To provide a method for evaluating pigment-forming capability, capable of simply evaluating the pigment-forming capability and for which evaluation reagents can be acquired inexpensively and easily.SOLUTION: An evaluation method evaluates pigment-forming capability of a specimen by bringing fruit juice of apples and/or banana into contact with the specimen and observing a change in a contact surface or a hue of the fruit juice.
