The present invention discloses a method of combining pressure and enzyme to extract a hydrolysate of cubilose. The method comprises: mixing cubilose with an enzyme and a certain percentage of water and performing a homogeneous fragmentation process to obtain a crude sample； performing a high-pressure hydrolysis process to the crude sample at a pressure of 50~200 MPa after the homogeneous fragmentation process to obtain a hydrolysate； and performing a separation process to the hydrolysate after the high-pressure hydrolysis process to obtain a hydrolyzed extract.
