The present invention relates to a noodle manufacturing apparatus. The apparatus comprises: a cylinder having a rod shape or cylindrical shape； a dough-transfer screw formed in a longitudinal direction inside the cylinder, transferring dough inserted from an inlet hole at an inlet side of the cylinder toward a forming means at an outlet side while making the dough matured and sterilized, and discharging the dough in the form of hard-boiled noodles； a power transmission means formed at the inlet side of the cylinder, and providing rotatory power to the dough-transfer screw； and a driving means formed at one inlet side of the cylinder, and rotating the dough-transfer screw by transferring driving force to the power transmission means. The dough-transfer screw includes: a shaft classified into an inserting section, a middle section, and a discharging section from the inlet side to the outlet side of the cylinder； and a plurality of wings arranged on each of the inserting section, the middle section, and the discharging section of the shaft, and having pitches different from each other.본 발명에 의하면, 막대 또는 원통 형상을 가지는 실린더； 상기 실린더의 내부에 길이 방향으로 구성되며 실린더의 입구측 투입구로부터 투입되는 반죽을 출구측 성형수단을 향해 강제 이송시키면서 숙성 및 살균되도록 한 후 완숙 상태의 국수로 배출되도록 하는 반죽이송용 스크류； 상기 실린더의 입구측에 위치되어 상기 스크류에 회전력을 제공하는 동력전달수단； 및 상기 실린더의 입구측 일측에 위치되어 상기 동력전달수단에 구동력을 전달하여 스크류가 회전 되도록 하는 구동수단을 포함하며, 상기 반죽이송용 스크류는, 실린더의 입구측으로부터 출구측을 향해 투입구간, 중간구간 및 배출구간으로 구분되는 샤프트와； 상기 샤프트의 투입구간, 중간구간 및 배출구간에 각각 배열되며 상호간 서로 다른 피치를 가지는 복수군의 날개부를 포함하는 국수제조장치가 제공된다.
