PURPOSE: Functional fermented pear liquid using pear processing byproducts, and a using method thereof are provided to inject culture fluid to juicing residues of pear for producing the functional fermented pear liquid. CONSTITUTION: A producing method of functional fermented pear liquid using pear processing byproducts comprises the following steps: mixing 100 parts of juicing residues of pear by weight, 100-150 parts of purified water by weight, and 0.05-0.5 parts of ceramic balls by weight, and heating the mixture for 30-60 minutes at 121 deg C; injecting curing fluid into the mixture, and fermenting the mixture for 12-24 hours at room temperature; grinding the fermented mixture using a grinder; mixing 40wt% of obtained functional fermented pear liquid, 4-6wt% of oligosaccharide, and 0.2-0.4wt% of abalone shell extract; and adding fermented soybean powder, psyllium husk, cyclo-dextrin, sea tangle, fermented pear powder, saururus chinensis powder, curcuma longa powder, salicornia herbacea powder, and hovenia dulcis fruit into the mixture.본 발명은 ⅰ) 배착즙 고형분 100 중량부에 정제수 100~150 중량부와 세라믹볼 0.05~0.5 중량부 첨가하여 121℃에서 30~60분 가열하는 단계; ⅱ) 수득된 혼합액에 효모 사카로마이세스 세레비지애(Saccharomycescerevisiae)(기탁번호:KCTC-7904호) 또는 클루이베로마이세스 프라질리스(Kluyveromyces fragilis)(기탁번호:KCTC-7260호) 배양액을 0.3-3 중량%를 접종한 후 실온에서 12~24시간 발효시키는 단계; 및 ⅲ) 수득된 발효 생성물을 마쇄기를 이용하여 마쇄시키는 단계;로 이루어진 pH 2~4 브릭스 농도 6~12%의 연갈색의 기능성 배고형분 발효액의 제조 방법에 관한 것이다.
