A LIQUID WHEY BEVERAGE PRODUCT NAMED CIAB-NAVITA CONTAINING A FIBER RICH PREPARATION PRODUCED FROM FRUIT PROCESSING BY-PRODUCTS WASTES AND USES OF THE PRODUCT
Dairy product like milk is one of the most important components of human diet. India is the largest milk producer in the world. With the increase in the population and increase in urbanization, the demand for processed milk products like cheese, paneer etc. has increased particularly due to growing uses such high protein and low lactose products. The work provides a beverage product named CIAB-NAVITA which has a specialty of being a dietary fiber and protein rich energy beverage, which also has merits of refreshing taste and the health benefits of whey ingredients and fruit dietary fiber originating from agro-industry waste/co-products like kinnow juice industry pulp and pomace. The kinnow pulp is treated with lime or for removal of bitterness. Tomato waste (pomace, peel) and banana pulp has also been used as a source of fiber for the preparation of the whey beverage. The liquid whey, which is rich in protein and lactose and other nutrients, is transformed into a nutraceutical beverage enriched with tasteful and prebiotic dietary fibers derived from fruit processing residues such as kinnow pulp or tomato pomace and banana pulp.
