PROBLEM TO BE SOLVED: To provide a method for attractively and favorably (beautifully) peeling a loquat fruit without damaging the fruit skin or heating it, and a favorable (beautiful) peeled loquat fruit obtained by the peeling method.SOLUTION: The method for peeling a loquat fruit includes: washing the loquat fruit treating it with liquid including an enzyme liquid containing a pectin degrading enzyme and a vegetable polysaccharide degrading enzyme (where the pectin degrading enzyme is excluded), and a surface-active agent and then removing at least an epicarp of the loquat fruit.COPYRIGHT: (C)2015,JPO&INPIT【課題】 ビワ果実の果皮を傷付けたり、或いは加熱したりすることなく、ビワ果実を見栄えよく良好に(美麗に)剥皮する方法と、この剥皮方法により得られた、良好な(美麗な)剥皮ビワ果実とを提供することを目的とするものである。【解決手段】 ビワ果実を洗浄処理し、続いてペクチン質分解酵素及び植物性多糖類分解酵素(但し、ペクチン質分解酵素を除く。)を含む酵素液と、界面活性剤と、を含有する液で処理し、次いでビワ果実の少なくとも外果皮を除去する処理を行うことを特徴とする、ビワ果実の剥皮方法を提供するものである。【選択図】 なし
