The present invention provide a method for the preservation of salad , as salad are fast deteriorating food items get affected due to infection from microbes present in the air, water in which it comes in contact, it order to increase the sustainability of the salads, the Chitosan nanoparticles are exploited Which is nothing but a Chitosan is a natural-based biopolymer derived from chitin, the second most abundant polymer in nature next to cellulose. Chitin is a polysaccharide, made of N-acetyl-D-glucosamine [� (1-4) 2-acetamido- 2-deoxy-3-D-glucopyranose (N-acetyl glucosamine)] units connected by � (l?4) linkage. The nanoparticles or the solution of the nanoparticles in weak acids such as acetic acid, citric acid, formic acid in concentration less than 0.1 % w/w is used for coating the salad ingredients by mixing or sprinkling
