The present invention relates to an apparatus for inhibiting the browning of fruits and vegetables. The objective of the present invention is to inhibit germs propagated even while fruits or vegetables rapidly browned after peeling are peeled through a series of steps, so as to maximally inhibit browning, a decomposition rate, and weight reduction of the fruits or the vegetables even if time is passed, and thereby extending an expiration date.
