I ABSTRACT In view of the foregoing, an embodiment herein provides a Healthy and Nutrient Rich Low Fat Quick Cooking Air Dried Noodles supplemented with Legume and Leafy Vegetable, wherein the Healthy and Nutrient Rich Low Fat noodles prepared from a legume flour (soybean and chick pea) and leafy vegetable powder (drumstick leaves, chickpea leaves and spinach) which are good source of protein, nutritional quality with respect to minerals, vitamins and fibre. Wherein the process for making the legume flour comprises steps of drying, pressing, soaking, grinding, mixing, sieving and extruding. Wherein the said leafy vegetable powder made by the process of drying, pressing, soaking, grinding, mixing, sieving and extruding. Wherein finally all flours are mixed to make dough and this dough is passed through an extruder to get the final product in the form of noodles. Wherein the said noodles as it is air dried to remove the moisture contents.
