The present invention relates to bioactive fractions (ingredients) derived from fruit juices. The bioactive fractions are either free of or substantially free of patulin and protein. Further, the bioactive fractions have antioxidant, free radical scavenging, moisturizing and buffering properties. The present invention also relates to a method for isolating bioactive fractions that are derived from fruit juices and are free or substantially free of protein and patulin.
