A process for producing a highly purified glucosyl stevia composition, comprising the steps of: adding starch to water to form a starch suspension; adding a mixture of α-amylase and CGTase to the starch suspension and incubating for about 0.5 to 2 hours at about 75-80 ° C, resulting in a suspension of liquefied starch; inactivate α-amylase by treatment at low pH with heat; cool the suspension of liquefied starch and adjust the pH to approximately 5.5 to 7.0; adding steviol glycosides to the suspension of liquefied starch, which produces a reaction mixture; add a second batch of CGTase to the reaction mixture and incubate for about 12 to 48 hours at about 55-75 ° C. add β-amylase to the reaction mixture and incubate for about 12-24 hours at about 35-55 ° C; inactivate the enzymes in the reaction mixture by heat treatment; decolorize the reaction mixture; removing non-diterpenic compounds by contacting the decolorized reaction mixture with macroporous adsorbent resin and subsequently eluting diterpenic glycosides adsorbed with aqueous ethanol to produce an aqueous ethanol eluate containing glycosides; desalinate the aqueous ethanol eluate containing glycosides with ion exchange resins; remove ethanol from aqueous ethanol eluate, which produces an aqueous eluate; concentrate and dry the aqueous eluate to obtain the dried glucosyl stevia composition; resuspend the dried stevia glucosyl composition in aqueous ethanol to form a suspension, remove the unmodified steviol glycosides from the suspension, and separate and dry the highly purified stevia glucosyl composition; wherein the highly purified stevia glucosyl composition comprises short chain steviol glycoside derivatives having two or less α-1,4-glucosyl residues, and less than about 15% of unmodified steviol glycosides.Un proceso para producir una composición de glucosil estevia altamente purificada, que comprende los pasos de: añadir almidón a agua para formar una suspensión de almidón; añadir una mezcla de α-amilas
