The present invention describes the production, purification and biological effectiveness of a novel polyene macrolide, generically called Pulitone (1). The macrolide 1 is obtained from a sugar hetero-fermentative process performed by a mixture of 5 yeasts and a bacterium, during two discontinuous phases and in a static system. The polyene 1 is purified by liquid-liquid extractions in a discontinuous system, for obtaining a concentrate extract of the macrolide 1 (437 ppm). The molecular structure is established by the determination of the spectroscopic properties (RMN-1H anD 13C, COSY, HSQC, HMBC AND NOESBY) and spectrometric properties thereof /electrospray and FAB+). The in Vitro evaluations have pondered the biocide activity over some of the main phytopathogen bacteria that affect economical interest crops, of the cucurbitaceae, gramineous, solanacea, leguminous and brassicales families. A water-based liquid product was separated from concentrate 1, which is called Pulitone (r) and has established an efficient control over the incidence and damages produced by previously evaluated bacteria.
