The present invention provides a method for preparation of coffee seeds to improve the quality of the coffee as well as to produce coffee wines. The method for preparing coffee seeds from coffee berries to improve quality of coffee, said method comprises steps of pulping coffee berries along with water adding sugars and known yeast in the separated pulped material fermenting the pulped material separating seeds from pulp of the pulped material and washing and drying the wet coffee seeds. The coffee seeds dry faster and very less amount of water requires washing the coffee seeds. The pulp separated from the coffee seeds is fermented further to produce coffee wine.
