PROBLEM TO BE SOLVED: To provide a shell membrane protein lysate having a large molecular weight compared to the conventional shell membrane protein lysate, a process for producing the same, and to provide a composition comprising such a shell membrane protein lysate.SOLUTION: According to the present invention, there is provided a method for producing a shell membrane protein lysate. The method comprises: heating a suspension of shell membrane protein adjusted to alkaline conditions at a treatment temperature of 130°C or higher and 160°C or lower and to reach the treatment temperature within 5 minutes and solubilizing the shell membrane protein.
