PROBLEM TO BE SOLVED: To provide a method for making meringue-like baked confectionery, by which the meringue-like baked confectionery having favorable appearance and mild palate feeling can be made with stable quality and at high productivity.SOLUTION: The method for making the meringue-like baked confectionery comprises: admixing 6-15 pts.mass of albumen powder to 100 pts.mass of sugar, and 16-25 pts.mass of water to 100 pts.mass of mixed flour containing 1-4 pts.mass of a foaming agent to prepare dough molding the dough and baking the molded dough without passing through any drying process. Propylene glycol fatty acid ester and/or glycerol fatty acid ester are/is used as the foaming agent, and the mixed flour and the water are mixed together to adjust the specific gravity of the dough to 0.8-0.95.
