The utility model describes a process of producing fish longanisa (sausage). Preferably fish meat is from goat meat. The fish longanisa is healthy and low in cholesterol. The process of producing fish longanisa comprising the following steps: washing and deboning the goat fish producing 76 pcnt by weight of fish meat grinding the fish meat into ground meat adding 8 pcnt by weight of minced garlic into the ground fish meat adding 8 pcnt by weight of brown sugar into the mixture adding 2 pcnt by weight of iodized salt into the mixture adding 6 pcnt by weight of spices (powdered black pepper, powdered garlic, curing salt, paprika powder, cayenne powder and allura red) mixing thoroughly to produce homogenous mixture and packing the produced longanisa with plastic into desired sizes.
