PROBLEM TO BE SOLVED: To provide a method for collecting and preserving a grape sap.SOLUTION: A grape sap is extracted in the following order: selecting a grape branch which is grown to bear only 1-3 bunches on one branch； harvesting mature fruits on the selected branch； followed by absorbing a nutrient from roots and leaves until defoliation stage； and pruning branches while leaving a part required for the bud of the next year after defoliation； washing the grape branches pruned to cut down； peeling off epidermis of the branches after washing； cutting the branches whose epidermis is peeled off to make pieces of branches with a length of 5 cm or less； soaking the pieces of branches into water of alcohol to extract sap from the cut ends.【課題】葡萄の樹液の採取方法と保存方法を提供する。【解決手段】つぎの順に葡萄の樹液を抽出する。一本の枝に１～３房だけ果実を付けるようにして育成した葡萄の枝を選択する。選択した枝で熟した果実を収穫した後、落葉する時期に至るまで根と葉から養分を吸収させてから、落葉後に、その枝を次年の芽吹きのために必要な部分を残して剪定する。前記の剪定をして切り落とした葡萄の枝を洗浄する。洗浄後の枝の表皮を剥ぐ。表皮を剥いだ枝を切断して５センチメートルかそれ以下の長さの枝片にする。前記の枝片を水またはアルコールに浸けて、切断端から樹液を抽出する。【選択図】なし
