PROBLEM TO BE SOLVED: To provide a fresh chocolate-like composition having fresh chocolate-like flavor and palate feeling which are satisfactorily maintained even when long-term distribution is performed in one-year scale and to provide a center-containing chocolate having the fresh chocolate-like composition as a center, which is coated with chocolate dough.SOLUTION: There is provided a fresh chocolate-like composition in which a water phase component containing carbohydrate of disaccharide or below containing straight chain polyhydric alcohol is heated and concentrated to caramelize the carbohydrate and then the water phase component whose solid content is prepared to be 70 wt.% or more and an oil phase component containing hard butter are mixed and emulsified into an oil-in-water type. The fresh chocolate-like composition contains 55-70 wt.% of the carbohydrate of the disaccharide or below having content of the straight chain polyhydric alcohol of 10-25 wt.%, 5-25 wt.% of the hard butter and 12-18 wt.% of water in which water activity is less than 0.600.
