PROBLEM TO BE SOLVED: To provide an alternative processed food material (foodstuff) as a substitute for a common food material, which has resistance to cooking and can be used for nursing care jelly-type material classified in UDF3.SOLUTION: A processed food material for cookable jelly-type nursing care food includes a mixture of a pasty food raw material obtained by cutting a food raw material and a gelatinizer mainly composed of mannan.
