To provide a fatty acid composition that has a high content of palmitoleic acid and is useful as a selective antibacterial agent that inhibits Staphylococcus aureus and does not inhibit epidermal Staphylococcus epidermidis, that is, useful as an antibacterial agent for keeping the balance of epidermal resident flora.SOLUTION: A novel transformant of yeast is prepared, and from lipids produced by the transformant, prepared is a fatty acid composition having a high content of palmitoleic acid and a low content of a (C18: 1) fatty acid having 18 carbon atoms and one unsaturated bond (oleic acid and vaccenic acid).SELECTED DRAWING: None【課題】パルミトレイン酸を高含有量で含有し、黄色ブドウ球菌(Staphylococcus aureus)を抑制し、表皮ブドウ球菌(Staphylococcus epidermidis)を抑制しない選択的抗菌剤、つまり表皮常在細菌叢のバランスを保つ抗菌剤として有用な、脂肪酸組成物を提供する。【解決手段】酵母の新規な形質転換株を作製し、該形質転換株が産生する脂質から、パルミトレイン酸を高含有量で含有し、かつ、炭素数が18で不飽和結合を1個有する脂肪酸(C18:1)(オレイン酸およびバクセン酸)の含有量の低い脂肪酸組成物を得る。【選択図】なし
