PURPOSE: Rice coated with a composition containing porphyran extracted from laver and alginic acid is provided. It has enhanced palatability, while providing physiological activity. CONSTITUTION: The rice is characterized in that it is coated with a composition containing 1 to 5 parts by weight of porphyran and 100 parts by weight of alginic acid into a thickness of 0.01 to 0.05mm. In the coating process, alginic acid is dissolved in water in a concentration of 1.5 to 2.0% and added with porphyran having a concentration of 0.1 to 0.5%. Then, the mixed solution is used to coat rice.
