To provide fish and shellfish having good palate feeling even after thawing.SOLUTION: The frozen fish and shellfish according to the present invention includes sliced fish or shucked fish of the fish and shellfish staying in a frozen state, a water absorbing material brought into contact with a body of the fish and shellfish to absorb water, and a packaging material for holding the sliced fish or the shucked fish in a state where the water absorbing material is brought into contact with it. The packaging material suitably houses the water absorbing material and the fish and shellfish in a sealed state, and the packaging material is reduced in a pressure in an inside to such an extent that the water absorbing material is tightly adhered to the sliced fish or the shucked fish.
