The invention relates to the food and compound feed industry and can be used in the production of food additives, functional foods and feed additives. Whole grain oats, wheat or barley are ground to particles with a size of 30-200 microns, the ground grains are enzymatically hydrolyzed in an aqueous medium of heat-stable alpha amylase then glucoamylase, and cooled. A 24-hour culture of the yeast Saccharomyces cerevisiae is added to the ferment lysate, and the yeast is grown under aeration and agitation until the sugars in the medium are exhausted. The yeast suspension is separated into a light fraction, i.e. culture fluid, a medium fraction, i.e. yeast biomass, and a heavy fraction, i.e. ground grain residue, and then the yeast biomass is autolyzed for a period of 4-24 hours.
