PROBLEM TO BE SOLVED: To provide a heating treatment method for a food product capable of uniformly heating a food product to the central part in a short time.SOLUTION: Since a short wave range of 27 to 300 MHz and/or alternate current in a short wave range is used, a food product passes through a plastic film (container) with an ordinary thickness, and thus can be uniformly heated. Thus, by disinfection by suitable heating and disinfection effect by an AC electric field, while maintaining the quality of a food product, in a short time, effective disinfection is obtained, and further, the deactivation of enzyme is performed.COPYRIGHT: (C)2015,JPO&INPIT【課題】短時間で食品の中心部まで均一に加熱できる食品の加熱処理方法を提供する。【解決手段】27MHz~300MHzの短波域乃超短波域の交流を用いるため、通常の厚さのプラスチックフィルム(容器)を透過して食品を均一に加熱できる。したがって、適度な加熱による殺菌と交流電界による殺菌効果により、食品の品質を維持したまま、短時間で効果的な殺菌ならびに酵素の失活が行われる。【選択図】 図1
