PROBLEM TO BE SOLVED: To provide a water dispersible composition of micronized β-carotene crystal having bright red color tone to overcome a problem that the color tone is stronger red color than a dye formulation by dissolving and emulsifying β-carotene crystal in oil and fat, but still mixed color of yellow, orange and red when using a dye formulation to which micronized β-carotene crystal is dispersed as a coloring agent.SOLUTION: In manufacturing a water dispersible composition of β-carotene crystal, a compound having ratio of absorbance at 430 nm and 550 nm (A430nm/A550nm) of 0.95 or less when absorbance of 0.004% aqueous solution (W/V) is measured can be provided by combining a specific emulsifier and emulsifier auxiliary.SELECTED DRAWING: Figure 1
