PROBLEM TO BE SOLVED: To provide an apparatus that can efficiently produce fermentation vegetables of higher quality without being accompanied with environmental pollution such as bad smells.SOLUTION: A heated steam supply device 6 is provided in the outside of an airtight chamber 5 with an insulation structure, the chamber that internally has a container 2 and an installation shelf 3 for storing vegetables 1 and an air agitation device 4. Also, an air pipe 7 for penetrating and sending the heated water vapor into the inside of the airtight chamber 5 is installed and a pressure reduction pump 8 applied with a deodorization function is provided separately in the outside of the airtight chamber 5. Also, an intake pipe 9 connected to this is penetrated and installed toward the inside of the airtight chamber 5.
