PROBLEM TO BE SOLVED: To provide an emulsion composition which is emulsified sufficiently, has wide adaptiveness of the sugar content and is usable with a single composition even when blended with various drinks.SOLUTION: An emulsion composition comprises desalinated gum arabic, octenylsuccinate starch, an oily component and water, in a mass ratio of the desalinated gum arabic to the octenylsuccinate of 3:1 to 15:1. The emulsion composition preferably contains one or more selected from metal salts of organic acids and non-desalinated gum arabic and more preferably contains a polyhydric alcohol.
