The present invention provides a method for manufacturing functional rice at low pressure, which adsorbs or coats, and ferments functional materials beneficial for a human body, such that the functional rice has a high nutritional value, and prevents cracks of the rice when the functional materials are dried after being adsorbed or coated, and thus provides excellent merchantability and increased distribution period of the rice. To this end, the method of the present invention comprises: a process of bringing moisture into contact with rice in a dry state a process of adsorbing functional powder materials by injecting the rice in contact with moisture and the functional powder materials into the drum, and stirring the same a process of obtaining the rice adsorbed with the functional powder materials to be injected into a pressure reducer, and stabilizing moisture penetration in a reduced pressure environment and a process of obtaining the rice having stabilized moisture penetration and drying the rice by cold air. In addition, the present invention comprises: a process of spraying functional liquid materials to rice in a dry state and coating the same a process of obtaining rice the coated with the functional liquid materials, inserting the rice into a pressure reducer, and stabilizing moisture penetration in a reduced pressure environment and a process of obtaining the rice having stabilized moisture penetration and drying the rice by cold air. According to the above technical aspect, the functional rice manufactured by the present invention has a high nutritional value by adsorbing or coating functional materials beneficial for a human body, and has excellent merchantability and increased distribution period by preventing cracks of the rice when the functional materials are dried after being adsorbed or coated.
