A method for producing water soluble curcumin nanoparticles is described. In one aspect,a stock solution of the curcumin (Sigma chemical, USA) was prepared in the sterile MQ water that contains unsoluble curcumin molecules. The curcumin from the stock solution is added to the sterile MQ water and this reaction solution subjected to the heat treatment under pressure (10 pounds (psi)l 13°C (235°F)) for the 5 min to produce water soluble curcumin nanoparticles. The temperature rises to 113°C under the pressure the superheated water molecules rapidly conduct heat into curcumin molecules, which make possible the synthesis of water soluble curcumin nanoparticles.
