PROBLEM TO BE SOLVED: To provide a method for heat treating a liquid egg of which coagulation properties closely resemble the coagulation properties of an unsterilized liquid egg.SOLUTION: The heat treating method of a liquid egg includes a preheating step 12 for heating an unsterilized liquid egg taken out from the shell of a broken egg up to a temperature lower than the protein denaturation temperature and a temperature keeping step 13 for keeping the preheated liquid egg at the preheated temperature. Since the liquid egg heated up to the preheating temperature is kept at the preheating temperature, the liquid egg can be reproduced in a connected or solidified state. The liquid egg in a reproduced state is heated up to the sterilization heating temperature by Joule heating for a short time and kept at the sterilization temperature to complete the sterilization. Keeping the liquid egg at the preheating temperature for a predetermined time allows the coagulation properties of the liquid egg after completion of heating to be maintained as in an unsterilized liquid egg.COPYRIGHT: (C)2014,JPO&INPIT【課題】液卵の凝集特性を未殺菌液卵に近い凝集特性とする加熱処理技術を提供する。【解決手段】この液卵の加熱処理方法は、割卵して殻から取り出された未殺菌の液卵を、液卵の蛋白質変成温度よりも低い温度に加熱する予熱工程12と、予熱温度に加熱された液卵を予熱温度に保持する予熱温度保持工程13とを有している。予熱温度にまで加熱された液卵を予熱温度に保持することにより、液卵は繋がったり、固まった状態に再生され、再生された状態のもとで、殺菌加熱温度にジュール加熱により短時間で加熱し、殺菌温度に保持することにより殺菌処理が終了する。予熱温度に液卵を所定時間保持することにより、加熱終了後の液卵の凝集特性を未殺菌液卵と同様に維持することができる。【選択図】図1
