The present invention relates to a method for manufacturing core-shell particles, in which the core includes a vegetable oil and the shell includes a polydopamine polymer, the method including the following steps: a. preparing a monodispersed emulsion of a vegetable oil in an aqueous solution b. placing the emulsion obtained in step a) in contact with a buffered solution having a pH higher than 7 and including a non-ionic surface-active agent and a compound having the following formula I: (I) in which R1 is a hydrogen atom or a -COOH group, R2 is a hydrogen atom or a -OH group, R3 is a hydrogen atom or a C1-C3 alkyl group, and R4 is a hydrogen atom or a -OH group such as to polycondense a polymer on the surface of the drops of the emulsion and c. recovering the core-shell particles obtained in step b).
