PROBLEM TO BE SOLVED: To provide a momordicae fruit sweetening component-containing composition and others that contains mogrosides commonly known as a sweetening component of momordicae fruit, exhibits a good sweetness quality, and also has an excellent function such as an antioxidative property.SOLUTION: Provided is a momordicae fruit sweetening component-containing composition: containing mogrosides and a protein prepared by a process in which an extract liquid of momordicae fruit is fed to an immobilized enzyme membrane having a proteinase immobilized therein, and while decomposing the protein of the extract liquid, permeating the liquid through the immobilized enzyme membrane, and by adding, to the immobilized enzyme membrane permeated liquid, an additive component such as sweetener and others; and further containing a sweetener, and in which the content of mogrosides is 0.5 mass% or more and less than 70 mass%, and the content of the protein is 15 pts.wt. or less per 150 pts.wt. of mogrosides.SELECTED DRAWING: None【課題】羅漢果の甘味成分として一般に知られるモグロシド類を含み、良好な甘味質を呈し、抗酸化性などの機能性にも優れた羅漢果甘味成分含有組成物等の提供。【解決手段】羅漢果の抽出液を、蛋白分解酵素を固定化した固定化酵素膜に供給して、該抽出液中の蛋白質を分解しながら、該固定化酵素膜を透過させる工程と、前記固定化酵素膜の透過液に、甘味料やその他の添加成分を加えルことで調製した、モグロシド類と蛋白質、さらに甘味料を含み、モグロシド類の含量が0.5~70%重量%未満であり、蛋白質の含量がモグロシド類150重量部に対して15重量部以下である羅漢果甘味成分含有組成物。【選択図】なし
