PROBLEM TO BE SOLVED: To provide a quick freezing method and quick freezing equipment which precisely maintains a temperature of brine in a freezing tank substantially constant and secures frozen quality of an object to be frozen.SOLUTION: When an object 50 to be frozen is immersed in brine 53 for freezing processing and is quickly frozen, two kinds of different temperatures of sherbet-like cooling brine 51, 52 containing solid particles are prepared and such two kinds of cooling brine 51, 52 are supplied to the brine 53 for freezing processing in a freezing tank 4 by every proper amount. According to a related constitution, a temperature of the brine 53 for the freezing processing is always precisely maintained substantially constant, the freezing processing of the object to be frozen is quickly performed under substantially constant temperature, therefore, ice crystal becomes smaller, cell destruction is prevented as much as possible, the frozen quality is improved, the shortening of a freezing processing time is facilitated and the reduction of a freezing cost is obtained.SELECTED DRAWING: Figure 1【課題】凍結槽内のブラインの温度を略一定に精度良く保持して被冷凍物の凍結品質を確保する。【解決手段】凍結処理用ブライン53内に被冷凍物50を浸漬させてこれを急速に冷凍させるに際し、固体粒子を含むシャーベット状の2種類の温度の異なる冷却ブライン51,52を用意し、これら2種類の冷却ブライン51,52を適宜量ずつ凍結槽4内の凍結処理用ブライン53に供給する。係る構成によれば、該凍結処理用ブライン53の温度が常時略一定に精度良く保持され、被冷凍物の凍結処理が略一定温度の下で急速に行われることから、氷結晶が小さくなり細胞破壊が可及的に防止され、その凍結品質が向上するとともに、凍結処理時間の短縮化が促進され、凍結コストの低減が図れる。【選択図】図1
