The bottom surface comprises at least one protruding element (5) for increasing the heat transfer rate between the mould (1) and a fluid flowing along the bottom surface (3). The protruding element may be shaped to create vortices in the fluid flowing along the bottom surface to improve the heat transfer. The confectionery may be chocolate.
