A composition comprising branched fructan molecules, wherein said branched fructan molecules have； a molecular weight of between about 0.3 to about 3 kDa；and/ora fructan chain length of about 2 to about 15 fructose units and/or an elution time of 7 to 22 minutes when on a Dionex HPAEC-PAD column.
