PROBLEM TO BE SOLVED: To obtain a vitaminic odor retarder suppressing an uncomfortable vitaminic odor of foods, drinks or medicines.SOLUTION: This vitaminic odor retarder is composed of a hydrolyzate of coffee bean containing quinic acid obtained by carrying out hydrolysis treatment of quinic acid or the coffee bean and purifying the hydrolyzate. The purpose is achieved by adding a small amount of the vitaminic odor retarder to the foods, drinks or medicines having various kinds of the uncomfortable vitaminic odors such as vitamin B family of vitamin B1, B2, B6, B12, etc., vitamin C, nicotinic acid, nicotinamide and biotin. Tastes of the foods, drinks or medicines are not influenced because the effect of the retarded is exhibited in a small amount.COPYRIGHT: (C)2001,JPO【課題】 飲食品や医薬品の不快なビタミン臭を抑制するビタミン臭抑制剤を提供することを課題とする。【解決手段】 キナ酸またはコーヒー豆を加水分解処理し、加水分解物を精製して得られるキナ酸を含むコーヒー豆加水分解物からなるビタミン臭抑制剤。このビタミン臭抑制剤をビタミンB1、B2、B6、B12などのビタミンB群、ビタミンC、ニコチン酸、ニコチン酸アミド、ビオチンなど種々の不快なビタミン臭を有する飲食品や医薬品に少量添加することにより、上記課題が達成される。少量の添加で効果を奏するので、飲食品や医薬の味に影響を与えることがない。
