PROBLEM TO BE SOLVED: To provide a gelatinizer capable of easily giving gelatinization properties to food and drink, in more details, a gelatinizer capable of easily gelatinizing food and drink by mixing with the food and drink in a temperature zone of 0-70°C and stirring at a revolution speed of 4,000 rpm or more in the presence of water without additionally requiring a heating or cooling step, and capable of producing gelatinous food and drink excellent in heat resistance after preparing.SOLUTION: A gelatinizer for food and drink contains (1)-(3) as follows as the essential components, and gives gelatinization properties to the food and drink by stirring at a revolution speed of 4,000 rpm or more in the presence of water. The gelatinizer is such that the food and drink are preferably heated after gelatinizing, and the food and drink are boiled rice food, noodle, soup, drink, concentrated flow food, enteral nutrient, stew, curry, or daily dish.
