The present invention provides a garlic and shallot preservation method, which is to prepare a packaging bag, and place the garlic or shallot into the receiving space and sealing. The garlic or shallot will consume oxygen under respiration effect and continuously generate carbon dioxide fully filled in the receiving space, so that the amount of oxygen contained in the receiving space is relatively reduced.
