The present invention relates to an apparatus and a method of drying an agricultural product through weight measurement, wherein, if the weight of an agricultural target to be dried, which is automatically measured through a load cell, reaches at a dry weight required by a user or an automatically preset dry weight, drying the agricultural target is stopped. According to the present invention, the apparatus comprises: a load cell which is included in the apparatus for drying the agricultural product to detect the weight of the agricultural product a temperature sensor which measures an internal temperature of the apparatus a humidity sensor which measures an internal humidity of the apparatus a storage unit which stores the weight, the temperature, the humidity, and the information on dry weight of the agricultural product at a time interval set by the user, or at a time point set by the user at a preset time interval and a control unit which performs a control operation to detect information of a target weight inputted by the user, information on the weight of the agricultural product, which has been completely dried, compared with the weight of the agricultural product before the drying process, to determine whether the weight of the agricultural product reaches at a target dry weight, and to complete the drying process of the agricultural product if it is determined that the weight of the drying target reaches at the target dry weight. The agricultural product having the weight, which is automatically measured, is dried by the dry weight required by the user or automatically set. During the drying of the agricultural product, the dry weight of the agricultural product is measured.
