Method is proposed for the production of quick-to-make cornmeal from corn flour, in which cornmeal is degreased to a fat content of 0.7 to 0.9 %, followed by purification, addition of water until 18.0–18.5 % moisture of the raw material is reached and stirring while simultaneously treating with steam at a temperature of 105–110 °C for 8–10 seconds, after which stage-by-stage processing of raw materials in a six-chamber extruder is carried out, with the maintenance of the following conditions in each of its chambers: temperature from 60 to 80 °C and pressure of 2.0–2.2 MPa with a processing time of 4–6 sec – in the first chamber, 80–120 °C and 2.0–2.2 MPa, processing time of 4–6 sec – in the second chamber, 120–140 °C and 3.2–3.5 MPa, processing time of 4–6 sec – in the third chamber, 140–160 °C and 4.0–4.5 MPa, processing time of 3–5 sec
