The present invention relates to a method for manufacturing a fermented material using Ginseng radix, Schizandrae fructus and Liriope tuber, and a fermented material manufactured thereby. More specifically, the method for manufacturing a fermented material comprises the steps of: mixing and extracting Ginseng radix, Schizandrae fructus and Liriope tuber； and inoculating a starter culture with extracts of Ginseng radix, Schizandrae fructus and Liriope tuber, and fermenting the same. In addition, the method for manufacturing a fermented material comprises the steps of: mixing and pulverize Ginseng radix, Schizandrae fructus and Liriope tuber； inoculating a starter culture with a pulverized mixture of Ginseng radix, Schizandrae fructus and Liriope tuber, and fermenting the same； and extracting a fermented material of Ginseng radix, Schizandrae fructus and Liriope tuber. The fermented material according to the present invention has an effect of enhancing the content of total phenol, ginsenoside, schizandra and inorganic materials, an anti-oxidative effect, and an effect of inhibiting oxidative stress.본 발명은 인삼, 오미자 및 맥문동을 이용한 발효소재의 제조방법에 관한 것으로, 구체적으로는 인삼, 오미자 및 맥문동을 혼합하여 추출하는 단계； 인삼, 오미자 및 맥문동의 추출물을 종균에 접종하여 발효하는 단계；를 포함하는 발효소재의 제조방법에 관한 것이다. 또한 본 발명은 인삼, 오미자 및 맥문동을 혼합하여 분쇄하는 단계； 인삼, 오미자 및 맥문동의 혼합 분쇄물에 종균을 접종하여 발효하는 단계； 인삼, 오미자 및 맥문동 발효물을 추출하는 단계를 포함하는 발효소재의 제조방법에 관한 것이다.본 발명에 따른 발효소재는 총페놀, 진세노사이드, 시잔드린 및 무기질의 함량을 증진시키는 효능, 항산화 효능 및 산화적 스트레스를 억제하는 효능을 보유하고 있다.
