PROBLEM TO BE SOLVED: To provide heating technologies for achieving coagulation characteristics of heated liquid egg similar to those of unsterilized liquid egg.SOLUTION: A method for heating liquid egg includes: a deaeration step 1 for removing a gas contained in the liquid egg and a Joule heating step 3 for heating the liquid egg to a sterilization temperature by distributing the electric power to an electrode mounted in a Joule heating unit while feeding the liquid egg through a heating channel formed in the Joule heating unit. By heating the deaerated liquid egg to the sterilization temperature by the Joule heating unit, the sterilized liquid egg can achieve the coagulation characteristics similar to those of unsterilized liquid egg.
