Disclosed are methods of preparing powdered nutritional compositions including caprylic acid-enriched coconut oil. The caprylic acid-enriched coconut oil provides an antimicrobial barrier in the powdered nutritional composition, inhibiting the growth of opportunistic pathogens, and particularly, of Cronobacter sakazakii.L'invention concerne des procédés pour préparer des compositions nutritionnelles en poudre comprenant de l'huile de noix de coco enrichie en acide caprylique.
