The present invention provides a method of cultivating shiitake mushrooms by using extruded germanium water and using a germanium water production device (40) comprising: a production device (10) which includes a germanium extruded water (G) production means (11) in which regular water (1) introduced from an upper part thereof, while flowing below a germanium stone laminated plate (12) and a germanium filter (13), is slowly pressurized in a vortex to have a germanium component sufficiently permeated in the regular water (1); a mixing and stirring unit (20) which is communicated with downstream of the production device (10) to receive the primarily produced germanium extruded water (G) and at the same time, to enhance chemical molecular bonding of the regular water (1) and the germanium component through a uniform rotation; and a water collection unit (30) which is communicated with downstream of the mixing and stirring unit (20) to store the secondarily produced germanium extruded water (G), wherein the shiitake mushrooms are cultivated as the germanium extruded water (G) is regularly sprayed on shiitake mushroom seeds (51) cultured in a culture medium (50) by communicating with a water collection unit (30) of the germanium water production device (40). By spraying the germanium water produced through the germanium water production device evenly on the shiitake mushrooms cultured in the culture medium, the present invention improves the productivity of shiitake mushrooms and enables the cultivation of shiitake mushrooms of good quality.
