The aqueouscompositions of the present disclosure comprise a substituted, cross-linkedstarchand a high amylose maize starch. The present disclosure also relates to aprocessfor preparing fried, coated food products such as fried, coated potatoarticles andto a fried, coated food product such as a fried, coated potato articlepreparedaccording to such a process.
