PURPOSE: A vacuum puffing device for producing Korean traditional oil-and-honey pastry, the vacuum puffed Korean traditional oil-and-honey pastry, and a producing method thereof are provided to uniformly produce micro structures on the oil-and-honey pastry. CONSTITUTION: A vacuum puffing device for producing Korean traditional oil-and-honey pastry comprises the following: a heating chamber(1) for directly heating ingredients； a heating plate(2) for increasing the temperature inside the heating chamber up to 200 deg C； a vacuum chamber(3) for removing air from the heating chamber； a vacuum pump(4) removing the pressure inside the vacuum chamber； a heating chamber pressure gauge(5) and a heat chamber vacuum gauge(6) for measuring the pressure inside the heating chamber； a vacuum chamber vacuum gauge(7) for measuring the pressure inside the vacuum chamber； a fan motor(8) for operating a fan(10)； and a controller(9) for controlling the heating temperature, the vacuum condition, and the fan operation.본 발명은 유과를 비유탕처리방법으로 제조하기 위한 진공팽화장치와, 상기 장치를 이용한 진공팽화 유과의 제조방법 및 이 방법에 따라 제조된 진공팽화 유과에 관한 것으로, 본 발명에 따른 진공팽화장치 및 진공팽화방법으로 제조된 유과는 종래 유탕 팽화 유과와 비교하여 미세구조가 매우 균일하고, 저장기간에 따라 과산화물가의 변화가 없어 저장안정이 매우 우수한 효과가 있다.
